Greetings!
Summer
is in full swing and I have to say, it has
been my favorite thus far. My daughter and I
have been soaking up plenty of vitamin D

Recipe: Hampton's
Jicama Bean Salad |
|
 A
tangy and crisp salad. It's perfect for a hot
summer day.
Ingredients
2 cups corn kernels
1 can of black beans, rinsed
1 root of fennel, minced
1 med jicama, peeled and chopped to
desired size
3 stalks of celery, minced
½ red onion, finely chopped
1 bunch of cilantro, cleaned and
chopped
Juice of 2 limes
Zest of ½ lemon
3 Tbsp white balsamic vinegar
2 Tbsp extra virgin olive oil
1. Combine all ingredients in a large bowl.
2. Cover and marinate until mealtime.
3. For an extra protein boost: toss in cooked,
chopped shrimp before serving.
4. ENJOY
